  • 2 cups cooked rice (preferably day-old) Using day-old rice helps achieve the best texture.
  • 1 pound shrimp, peeled and deveined Frozen shrimp can be used, just ensure they are thawed.
  • 1 cup mixed vegetables (like peas and carrots) Feel free to add any vegetables you have on hand.
  • 3 stalks green onions, chopped Add before serving.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon sesame oil For cooking.
  • 1 teaspoon garlic, minced Adds aroma and flavor.
  • 1 teaspoon ginger, minced Adds a refreshing zest.
  • to taste salt and pepper

Method

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add the shrimp, cooking until they turn pink, which should take about 3-4 minutes.
  4. Stir in the mixed vegetables and cook for another 2-3 minutes until heated through.
  5. Push the shrimp and veggies to the side of the skillet, add the rice, and break it up with a spatula.
  6. Pour soy sauce over the rice, mix everything well, and season with salt, pepper, and chili flakes if desired.
  7. Add chopped green onions before serving and mix again.

Notes

Be organized with your ingredients as stir-frying goes quickly. Make sure your rice is cold and a little dry to prevent it from becoming mushy. You can customize with other proteins or vegetables like bell peppers or broccoli.
