- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the shrimp, cooking until they turn pink, which should take about 3-4 minutes.
- Stir in the mixed vegetables and cook for another 2-3 minutes until heated through.
- Push the shrimp and veggies to the side of the skillet, add the rice, and break it up with a spatula.
- Pour soy sauce over the rice, mix everything well, and season with salt, pepper, and chili flakes if desired.
- Add chopped green onions before serving and mix again.
Notes
Be organized with your ingredients as stir-frying goes quickly. Make sure your rice is cold and a little dry to prevent it from becoming mushy. You can customize with other proteins or vegetables like bell peppers or broccoli.
