Ingredients
  

For the Chicken and Sauce
  • 1 pound bite-sized chicken pieces Can use thawed frozen chicken.
  • 1/2 cup sweet chili sauce Adjust to taste.
For the Vegetables
  • 1 cup bell peppers, sliced Mix of colors for vibrancy.
  • 1 cup broccoli florets Can substitute with zucchini, carrots, or snap peas.
For Serving
  • 4 cups cooked rice or quinoa Suggestions for base.
  • to taste chopped peanuts or sesame seeds For added crunch.
  • 2 slices lime For squeezing on top.

Method
 

Cooking the Chicken
  1. Heat a skillet over high heat and add the chicken pieces.
  2. Cook until golden brown and cooked through, about 5-7 minutes.
Adding Vegetables
  1. Add the sliced bell peppers and broccoli to the skillet.
  2. Drizzle the sweet chili sauce over the chicken and vegetables.
  3. Let everything sizzle together for about 1 minute.
Serving
  1. Serve the chicken and vegetable mixture over a bed of rice or quinoa.
  2. Top with chopped peanuts or sesame seeds, if desired.
  3. Add a lime wedge on the side.

Notes

Don’t overcrowd the pan when cooking; use high heat for a good sear. Experiment with different vegetables for variety.
