  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour Do not overmix the batter when adding.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberries, chopped Let sit with a bit of sugar for enhanced flavor.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until well combined.
  6. Gently fold in the chopped strawberries.
Baking
  1. Pour the batter into the prepared bundt pan and smooth the top.
  2. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with whipped cream or vanilla ice cream for a special touch. This cake can also be garnished with fresh strawberries or chocolate sauce.
