Ingredients
  

Main Ingredients
  • 1 lb chicken thighs Cut into bite-sized pieces
  • 1 cup rice Cook according to package instructions
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil For cooking chicken
  • 2 cloves garlic, minced
  • to taste salt and pepper For seasoning
  • as needed chopped green onions For topping

Method
 

Preparation
  1. Cook the rice according to the package instructions.
  2. While the rice is cooking, heat the vegetable oil in a large pan over medium heat.
  3. Season the chicken with salt and pepper and add to the pan.
  4. Cook the chicken until browned and cooked through, about 6-8 minutes.
Make the Sauce
  1. In a small bowl, whisk together soy sauce, honey, minced garlic, and cornstarch.
  2. Pour this mixture over the chicken in the pan.
  3. Stir well until the sauce thickens and coats the chicken nicely.
Serving
  1. Serve the sticky chicken over the cooked rice.
  2. Sprinkle with chopped green onions to finish.

Notes

For extra crispiness, sear the chicken in batches. Marinate chicken in soy sauce and honey for a few hours for added flavor. Feel free to swap rice for quinoa or cauliflower rice for healthier options.
