Sourdough Pita Bread

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup active sourdough starter Make sure it's active and bubbly.
  • 1 cup warm water
  • 1 tablespoon olive oil
  • 1 teaspoon sugar

Method
 

Preparation
  1. In a large bowl, mix the all-purpose flour, whole wheat flour, and salt.
  2. In another bowl, combine the warm water, sugar, and olive oil. Then add the active sourdough starter to this mixture.
  3. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until it's smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a cloth, and let it rise for about 4-6 hours or until it has doubled in size.
Baking
  1. Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.
  2. Once the dough has risen, divide it into equal pieces and roll each piece into a circle about 1/4 inch thick.
  3. Carefully place the rolled-out pita onto the hot stone or sheet and bake for 3-5 minutes until they puff up.
  4. Remove from the oven and let them cool under a cloth until ready to serve.

Notes

Serve with grilled chicken, veggies, or as a base for mini pizzas. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
