Preparation
- In a large bowl, mix the all-purpose flour, whole wheat flour, and salt.
- In another bowl, combine the warm water, sugar, and olive oil. Then add the active sourdough starter to this mixture.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until it's smooth and elastic.
- Place the dough in a greased bowl, cover it with a cloth, and let it rise for about 4-6 hours or until it has doubled in size.
Baking
- Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.
- Once the dough has risen, divide it into equal pieces and roll each piece into a circle about 1/4 inch thick.
- Carefully place the rolled-out pita onto the hot stone or sheet and bake for 3-5 minutes until they puff up.
- Remove from the oven and let them cool under a cloth until ready to serve.
Notes
Serve with grilled chicken, veggies, or as a base for mini pizzas. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
