  • 3 large ripe bananas Should be super ripe for maximum flavor
  • 1 cup all-purpose flour
  • 1 cup oats Rolled oats are preferred
  • 1/2 cup sugar Can substitute with honey or maple syrup
  • 1/2 cup walnuts or chocolate chips Optional, choose one or both for customization
  • 1 tsp baking soda
  • 1 tsp cinnamon Adds warmth and flavor
  • 1/4 tsp salt
  • 1 large egg Optional for binding

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in sugars, egg (if using), and cinnamon until well combined.
  4. In another bowl, whisk together the flour, oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture and mix just until combined. Avoid overmixing.
  6. Fold in walnuts or chocolate chips if using.
Baking
  1. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are slightly golden and the center is still soft.
  3. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack.

Notes

These cookies are great with a glass of milk or coffee. You can freeze leftover cookies or the dough for later use. Just allow to thaw before baking.
