Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in sugars, egg (if using), and cinnamon until well combined.
- In another bowl, whisk together the flour, oats, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture and mix just until combined. Avoid overmixing.
- Fold in walnuts or chocolate chips if using.
Baking
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are slightly golden and the center is still soft.
- Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack.
Notes
These cookies are great with a glass of milk or coffee. You can freeze leftover cookies or the dough for later use. Just allow to thaw before baking.
