For the Shrimp
  • 1 pound shrimp Fresh or good-quality frozen, peeled and deveined
  • 1 tablespoon oil For cooking the shrimp
  • 1 medium onion, chopped For flavor
  • 2 cloves garlic, minced
  • 2 tablespoons chipotle in adobo sauce Adjust to taste for spiciness

Method
 

Cook the Grits
  1. Bring water or broth to a boil in a pot.
  2. Add the grits and reduce the heat.
  3. Stir until thick and creamy.
  4. Stir in the butter and cheese, then season with salt and pepper to taste.
Prepare the Shrimp
  1. In a skillet, heat oil over medium-high heat.
  2. Add the chopped onion and bell pepper, cooking until softened.
  3. Stir in the garlic and chipotle in adobo sauce.
  4. Add the shrimp and cook until pink and cooked through.
Combine and Serve
