Ingredients
  

Main Ingredients
  • 1 pound Fresh shrimp, peeled and deveined Opt for uncooked shrimp for the best taste.
  • 1/2 cup Fresh lime juice For marinating shrimp.
  • 1 medium Cucumber, diced Add just before serving.
  • 1 medium Red onion, diced Add just before serving.
  • 1/4 cup Fresh cilantro, chopped
  • Salt to taste Salt

Method
 

Preparation
  1. In a large bowl, combine the fresh shrimp and lime juice. Ensure the shrimp is fully submerged.
  2. Cover the bowl and refrigerate for at least 30 minutes for the shrimp to marinate and slightly 'cook' in the lime juice.
Final Mixing
  1. After marinating, drain a little of the lime juice if desired, then mix in the diced cucumber, red onion, and chopped cilantro.
  2. Season with salt to taste, and mix well.
Serving
  1. Serve immediately, paired with tortilla chips or on a bed of lettuce.
  2. Top with avocado and serve in taco shells for a fun twist.

Notes

Shrimp Ceviche is best enjoyed fresh, but leftovers can be stored in the fridge for up to 24 hours. For a twist, try using other seafood like tilapia or scallops.
