Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups seasonal veggies (like bell peppers, zucchini, or broccoli) Feel free to use whatever seasonal veggies you prefer!
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
Garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper. Spread them onto a baking sheet.
  3. Prepare your veggies in a similar fashion.
Roasting
  1. Roast the chickpeas and veggies in the oven for about 20-25 minutes, until crispy and golden.
  2. Remove from the oven and let cool slightly before assembling your bowls.
Assembly
  1. Top your bowls with the roasted chickpeas and veggies, and garnish with fresh herbs if desired.

Notes
