Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, mash the overripe bananas.
- Add pumpkin puree, vegetable oil, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, granulated sugar, and brown sugar.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For serving, consider spreading cream cheese on top or serving warm with a pat of butter. Great with coffee or tea.
