Ingredients

For the Dough
  • 2 cups all-purpose flour
  • 1 cup active sourdough starter Must be bubbly and active for best results.
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup warm water, as needed Add until the dough comes together.
For the Filling
  • 1 cup shredded mozzarella cheese
  • 1 cup slices of pepperoni
  • 1/2 cup pizza sauce or marinara sauce
  • 1/2 teaspoon Italian seasoning (optional)
  • to taste Salt and pepper For seasoning.

Method

Make the Dough
  1. In a mixing bowl, combine flour and salt. Mix well.
  2. Add your active sourdough starter and olive oil.
  3. If the dough feels dry, slowly add warm water until the dough comes together.
  4. Knead the dough for about 5 to 7 minutes until it becomes soft and elastic.
First Rise
  1. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise at room temperature for about 4 to 6 hours, or until it has doubled in size.
Prepare the Filling
  1. In a bowl, mix the shredded mozzarella cheese, pepperoni slices, pizza sauce, and Italian seasoning.
  2. Season with salt and pepper, making sure everything is evenly combined.
Shape the Calzones
  1. Once the dough has risen, punch it down gently and divide it into 4 equal pieces.
  2. Roll each piece into a circle about 6 inches in diameter.
  3. Place a generous amount of filling on one half of the circle, leaving some space at the edges for sealing.
Seal the Calzones
  1. Fold the dough over the filling to create a half-moon shape.
  2. Press the edges together to seal, then use a fork to crimp the edges, ensuring the filling stays inside.
Second Rise
  1. Place the calzones on a parchment-lined baking sheet.
  2. Cover them with a kitchen towel, and let them rise for another 30 to 45 minutes.
Preheat the Oven
  1. While the calzones are rising, preheat your oven to 425°F (220°C).
Bake
  1. Make a few small slashes on top of each calzone to let steam escape.
  2. Bake in the preheated oven for about 15 to 20 minutes, or until they turn golden brown.
Serve
  1. Once baked, let them cool for a few minutes before serving. They are best enjoyed warm.

Notes

Adjust the recipe with creative fillings like vegetables and different cheeses, use room temperature ingredients for better mixing, and let the dough rise longer for enhanced flavor.
