  • 6 large large potatoes, peeled and diced
  • 1 cup chopped onions
  • 1 cup bacon pieces Use crispy bacon for added flavor.
  • 4 cups chicken broth Can be substituted with vegetable broth for a vegetarian option.
  • 2 cups heavy cream For a richer flavor.
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Green onions, for garnish

Method
 

Preparation
  1. In a large pot, cook the bacon until crispy. Remove and drain on paper towels.
  2. In the same pot, add the chopped onions and cook until they are translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then simmer until the potatoes are tender.
  4. Once cooked, use a masher to slightly mash the potatoes to create a creamy texture.
  5. Stir in the heavy cream, garlic powder, and season with salt and pepper.
  6. Top with shredded cheese and crumbled bacon before serving.

Notes

For a richer soup, consider adding sour cream or smoked paprika. Toss in corn or peas for extra nutrition. Store leftovers in the refrigerator after cooling completely.
