  • 1 cup brown sugar Packed firmly for accurate measurement.
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda Can substitute with baking powder.
  • 1 teaspoon vanilla extract
  • 2 large eggs Room temperature for best mixing.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour and baking soda.
  4. Gradually add the dry ingredients to the wet ingredients until fully combined.
  5. Chill the dough for about 30 minutes if it feels too sticky.
Baking
  1. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Flatten each dough ball slightly and create a crisscross pattern using a fork.
  3. Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
  4. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. They can also be frozen for longer storage. For a variation, consider adding chocolate chips or using them as a base for ice cream sandwiches.
