Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour and baking soda.
- Gradually add the dry ingredients to the wet ingredients until fully combined.
- Chill the dough for about 30 minutes if it feels too sticky.
Baking
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
- Flatten each dough ball slightly and create a crisscross pattern using a fork.
- Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week. They can also be frozen for longer storage. For a variation, consider adding chocolate chips or using them as a base for ice cream sandwiches.
