Ingredients
  

Main Ingredients
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional) Omit for vegan version
Dressing
  • 1 juice of lemon
  • 2 tablespoons olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the chickpeas, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss everything together until well coated.
  4. If desired, add feta cheese on top and mix gently.
  5. Serve immediately or let it chill in the fridge for 30 minutes to enhance the flavors.

Notes

Use fresh ingredients for the best flavor. You can prepare it ahead of time by tossing the salad without the dressing and adding it just before serving. Feel free to switch up the veggies based on what you have on hand, such as adding olives or avocado for extra creaminess.
