Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray or paper liners.
  2. Cook sausage in a skillet over medium heat until browned.
  3. In a large mixing bowl, combine cooked sausage, beaten eggs, shredded cheese, and chopped vegetables.
Baking
  1. Pour the mixture evenly into the muffin tins.
  2. Bake for about 20 minutes, or until set and golden brown.
Serving
  1. Allow muffins to cool slightly before removing from the tin. Serve warm.
