  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 4 medium potatoes, diced Cut into equal-sized chunks.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced Use your favorite colors.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef until cooked through.
  3. Add the chopped onions and minced garlic, cooking until the onion is translucent.
  4. Add the diced potatoes and bell peppers, mixing well.
  5. Transfer the mixture to a baking dish, cover it with foil, and bake for 30-35 minutes or until potatoes are tender.

Notes

This dish makes great leftovers and can be easily frozen for quick meals. Try adding cheese on top during the last 10 minutes of baking for extra flavor. Pairs well with a garden salad or crusty bread.
