For the marinade
  • 4 pieces chicken breasts Use boneless and skinless for best results.
  • 1/4 cup fresh lemon juice Freshly squeezed is recommended.
  • 4 cloves minced garlic Adjust based on your preference for garlic.
  • 3 tablespoons olive oil Extra virgin olive oil adds the best flavor.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper For seasoning.
  • 1 teaspoon dried thyme or rosemary Optional for added flavor.
For the sheet pan
  • 4 cups bite-sized potatoes Chop into even pieces for even cooking.
  • 2 cups broccoli florets Can be replaced with other vegetables like asparagus.

Method
 

Preparation
  1. In a mixing bowl, combine lemon juice, minced garlic, olive oil, salt, pepper, and optional herbs.
  2. Marinate the chicken in the mixture for at least 30 minutes, preferably overnight.
  3. Preheat your oven to 400°F (200°C).
  4. In a large bowl, toss chopped potatoes and broccoli with olive oil, salt, and pepper.
Cooking
  1. Spread the vegetables on a baking sheet and place the marinated chicken on top.
  2. Bake in the preheated oven for 25 to 30 minutes until the chicken is cooked through and reaches 165°F (75°C).

Notes

For best results, allow chicken to rest after baking for juicy meat. Add fresh parsley or lemon zest before serving for garnish.
