Preparation
- In a mixing bowl, combine lemon juice, minced garlic, olive oil, salt, pepper, and optional herbs.
- Marinate the chicken in the mixture for at least 30 minutes, preferably overnight.
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss chopped potatoes and broccoli with olive oil, salt, and pepper.
Cooking
- Spread the vegetables on a baking sheet and place the marinated chicken on top.
- Bake in the preheated oven for 25 to 30 minutes until the chicken is cooked through and reaches 165°F (75°C).
Notes
For best results, allow chicken to rest after baking for juicy meat. Add fresh parsley or lemon zest before serving for garnish.
