  • 2 tablespoons soy sauce For seasoning.
  • 1 tablespoon sesame oil For flavor.
  • 4 green onions chopped For garnish.
  • 1/4 cup toasted sesame seeds Optional topping for crunch.
For the Gochujang Aioli
  • 1/2 cup mayonnaise Base for the dip.
  • 2 tablespoons gochujang Korean chili paste for spice.
  • 2 cloves garlic, minced For flavor.
  • 1 tablespoon lime juice Adds acidity.

Method
 

Preparation
  1. Start by cooking your rice a day in advance if possible.
  2. Chop the kimchi, vegetables, and any protein you wish to add.
Cooking
  1. In a hot skillet, add the day-old rice, kimchi, mixed vegetables, soy sauce, and sesame oil.
  2. Stir-fry for about 5-7 minutes until everything is heated through.
  3. Add chopped green onions and mix well.
  4. If desired, top with toasted sesame seeds before serving.
Making the Aioli
  1. In a bowl, combine mayonnaise, gochujang, minced garlic, and lime juice.
  2. Mix until smooth and adjust seasoning if necessary.

Notes

For extra flavor, consider adding chopped green onions at the end. You can also explore various aioli flavors by mixing in sriracha for an added kick.
