Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for about 30 seconds until softened and mix until smooth.
- In a separate bowl, mix almond flour, baking powder, salt, and eggs. Combine the cheese mixture with the dry ingredients. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle shape, about 1/4 inch thick.
- In a small bowl, mix erythritol and cinnamon. Spread melted butter over the rolled-out dough, then sprinkle the cinnamon mixture evenly on top.
- Roll the dough up tightly from one side to the other, keeping it as tight as possible, and slice into pieces about 1 inch thick.
Baking
- Place the rolls on the prepared baking sheet and bake for 15 to 20 minutes, or until golden brown.
- While the rolls are baking, beat together cream cheese, butter, erythritol, and vanilla extract until smooth.
Serving
- Let the cinnamon rolls cool slightly before drizzling the cream cheese frosting over them. Enjoy warm!
Notes
For more flavor, consider adding nuts or sugar-free chocolate chips to the filling. These rolls can be prepared ahead of time and stored in the fridge before baking for convenience.
