Ingredients

For the dough
  • 2 cups almond flour
  • ½ cup mozzarella cheese, shredded Use finely shredded mozzarella for better melting.
  • 2 oz cream cheese Softened.
  • 2 large eggs Large eggs are recommended.
  • 2 tsp baking powder
  • 1 tsp vanilla extract Pure vanilla extract is recommended.
  • ½ tsp salt Adjust according to taste.
For the filling
  • ¼ cup erythritol or another keto-friendly sweetener Adjust sweetness to taste.
  • 2 tsp ground cinnamon
  • 2 tbsp melted butter Unsalted butter is preferred.
For the cream cheese frosting
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened Use unsalted butter.
  • ¼ cup erythritol You may also use powdered erythritol for a smoother frosting.
  • 1 tsp vanilla extract For added flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for about 30 seconds until softened and mix until smooth.
  3. In a separate bowl, mix almond flour, baking powder, salt, and eggs. Combine the cheese mixture with the dry ingredients. Mix until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out into a rectangle shape, about 1/4 inch thick.
  5. In a small bowl, mix erythritol and cinnamon. Spread melted butter over the rolled-out dough, then sprinkle the cinnamon mixture evenly on top.
  6. Roll the dough up tightly from one side to the other, keeping it as tight as possible, and slice into pieces about 1 inch thick.
Baking
  1. Place the rolls on the prepared baking sheet and bake for 15 to 20 minutes, or until golden brown.
  2. While the rolls are baking, beat together cream cheese, butter, erythritol, and vanilla extract until smooth.
Serving
  1. Let the cinnamon rolls cool slightly before drizzling the cream cheese frosting over them. Enjoy warm!

Notes

For more flavor, consider adding nuts or sugar-free chocolate chips to the filling. These rolls can be prepared ahead of time and stored in the fridge before baking for convenience.
