Ingredients
  

For the Jerk Chicken
  • 4 pieces chicken breasts Marinate for at least 1 hour.
  • 2 tablespoons jerk seasoning Adjust according to spice preference.
For the Mango Slaw
  • 2 cups shredded cabbage Use a mix of green and purple for color.
  • 1 cup fresh mango slices Diced mango for sweetness.
  • 1 cup shredded carrots Adds crunch and sweetness.
  • 2 tablespoons lime juice Freshly squeezed for best flavor.
  • 1 tablespoon honey Adjust based on sweetness preference.
For the Honey Lime Cream
  • 1/2 cup sour cream Can substitute with yogurt.
  • 1 tablespoon honey For sweetness.
  • 1 teaspoon lime juice To enhance flavor.

Method
 

Preparation
  1. Marinate the chicken breasts with jerk seasoning for at least 1 hour, or overnight.
  2. Prepare the mango slaw by mixing shredded cabbage, fresh mango slices, and shredded carrots in a bowl.
  3. In a separate bowl, mix lime juice and honey to create a dressing for the slaw.
  4. Combine the slaw ingredients with the dressing and toss well.
  5. In another bowl, prepare the honey lime cream by mixing sour cream, honey, and lime juice until smooth.
Cooking
  1. Grill the marinated chicken on medium heat until fully cooked, about 6-7 minutes per side.
  2. Once cooked, remove from grill and let rest for a few minutes before slicing into strips.
Assembly
  1. Arrange the sliced grilled chicken on top of the mango slaw.
  2. Drizzle honey lime cream over the chicken and slaw before serving.

Notes

Use fresh ingredients for best flavor. Adjust jerk seasoning to control spice level. Can be served with grilled vegetables or quinoa for a heartier meal.
