  • 2 cups flour All-purpose flour
  • 1 cup sugar Granulated sugar
  • 2 teaspoons baking powder For leavening
  • 1 teaspoon mixed spices Cinnamon and nutmeg suggested
Wet Ingredients
  • 2 large eggs Large eggs, beaten
  • 1 cup yogurt Plain yogurt or Greek yogurt
  • 2 cups fresh rhubarb Chopped into small pieces

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a bowl, mix the dry ingredients: flour, sugar, baking powder, and spices.
  3. In another bowl, combine the wet ingredients: eggs and yogurt.
  4. Fold in the chopped rhubarb gently into the combined mixture.
  5. Pour the mixture into the prepared loaf pan.
Baking
  1. Bake in the oven for about 60 minutes, or until a toothpick comes out clean.

Notes

Tip: Make sure to chop the rhubarb into small pieces for even distribution throughout the bread. If you prefer your bread sweeter, add extra sugar as needed.
