- In a medium saucepan, combine the water, sugar, and salt. Stir the mixture over medium heat until the sugar dissolves completely.
- Add in the mashed bananas and continue to cook for about 10 minutes, stirring occasionally.
- Remove the pan from heat and stir in the vanilla extract.
- Let the syrup cool for a few minutes, then strain it through a fine sieve to get rid of any banana pulp.
- Pour the syrup into a clean jar or bottle and store it in the refrigerator.
Notes
Choose ripe bananas for the best flavor. Strain the syrup for a smooth texture and store in an airtight container for up to two weeks.
