  • 1 pound boneless, skinless chicken breasts Make sure to slice evenly for quick cooking.
  • 1 cup marinara sauce Fresh or homemade sauce is recommended.
  • 1 cup shredded mozzarella cheese
  • 1 cup grilled zucchini, sliced Can substitute with other vegetables like bell peppers or spinach.
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-6 minutes on each side, or until golden brown and cooked through.
  3. Once the chicken is done, pour the marinara sauce over it, and top with the mozzarella cheese.
  4. Cover the skillet and let it cook for an additional 3 minutes, until the cheese is melted.
  5. Serve the chicken over a bed of grilled zucchini, and garnish with fresh basil if desired.

Notes

Pair with a side salad or whole grain bread for a complete meal. Roasted garlic vegetables are also a great accompaniment.
