For the quinoa
  • 1 cup quinoa Rinse under cold water before cooking.
  • 2 cups water Use a 2:1 water-to-quinoa ratio.
For the toppings
  • 1 cup bell peppers Chopped.
  • 1 cup cucumbers Diced.
  • 1 cup cherry tomatoes Halved.
  • 1/4 cup your favorite dressing For drizzling.

Preparation
  1. Marinate the chicken with olive oil, lemon juice, garlic, and herbs for at least 30 minutes.
  2. While the chicken is marinating, rinse the quinoa under cold water.
  3. Cook the quinoa in a saucepan with 2 cups of water according to package instructions.
