Ingredients
  

For the Sauce
  • 2 cups tomatillos, husked and halved
  • 2 jalapeños, chopped (seeds removed for less heat)
  • 1 cup cilantro leaves
  • 1/2 cup onion, chopped
  • 2 cloves garlic
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
For the Chilaquiles
  • 3 cups tortilla chips Use thick, sturdy chips.
  • 1 avocado sliced (for topping)
  • 1/2 cup crumbled queso fresco For topping.

Method
 

Preparation
  1. Blend the tomatillos, jalapeños, cilantro, onion, garlic, lime juice, and salt together until smooth.
Cooking
  1. In a pan, heat the sauce over medium heat.
  2. Add the tortilla chips and stir until the chips are nicely coated.
  3. Serve immediately, topped with avocado and queso fresco.

Notes

Best served hot and fresh. Customize with toppings like fried eggs or grilled chicken. Not recommended to freeze assembled chilaquiles as chips will become soggy.
