Ingredients

Main Ingredients
  • 1 lb chicken thighs, boneless and skinless Cut into bite-sized pieces
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked cannellini beans Can substitute with other white beans
  • 2 cups chicken broth Use low-sodium for better control over seasoning
  • 1 cup spinach Fresh spinach, added at the end
  • 2 teaspoons dried Italian herbs
  • to taste Salt and pepper
  • 1 tablespoon olive oil for cooking For sautéing

Method

Preparation
  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent, about 3 to 5 minutes.
  3. Cut the chicken thighs into bite-sized pieces and season with salt and pepper. Add the chicken to the pot and cook until browned on all sides.
  4. Toss in the chopped red bell pepper and cherry tomatoes, and cook for another 3 minutes.
  5. Pour in the chicken broth and stir in the cooked cannellini beans, dried Italian herbs, and more salt and pepper if desired. Bring to a simmer.
  6. Let it simmer for about 20 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld.
  7. Finally, add the spinach and let it wilt for about 2 minutes.
  8. Taste and adjust seasoning if necessary before serving.

Notes

Sear the chicken well for added flavor. This stew keeps well in the fridge, and may taste even better the next day.
