  • 1 pound ground chicken or lean ground turkey, 96% lean
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon parsley, chopped for garnish

Preparation
  1. Preheat the oven to 400°F (200°C) and spray a sheet pan with cooking spray.
  2. In a large bowl, combine the ground chicken, egg, almond flour, parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.
  3. Shape the mixture into 16 one-inch meatballs and place them in the prepared baking dish.
Cooking
  1. Bake the meatballs for 18-20 minutes, or until cooked through.
  2. Sprinkle with fresh parsley and serve over zucchini noodles, cauliflower mash, or as desired.

Notes

These meatballs can be served as a main dish or appetizer. They can also be frozen for up to three months. Don’t overmix the ingredients to keep the meatballs tender.
