Preparation
- Preheat the oven to 400°F (200°C) and spray a sheet pan with cooking spray.
- In a large bowl, combine the ground chicken, egg, almond flour, parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.
- Shape the mixture into 16 one-inch meatballs and place them in the prepared baking dish.
Cooking
- Bake the meatballs for 18-20 minutes, or until cooked through.
- Sprinkle with fresh parsley and serve over zucchini noodles, cauliflower mash, or as desired.
Notes
These meatballs can be served as a main dish or appetizer. They can also be frozen for up to three months. Don’t overmix the ingredients to keep the meatballs tender.
