  • 1 tbsp olive oil For frying
  • 4 cups fresh spinach Or frozen (thawed and drained)
  • 1 cup feta cheese Crumble before adding
  • to taste salt For seasoning

Preparation
  1. Bring a large pot of salted water to a boil and add the gnocchi. Cook until they float, about 2-3 minutes. Drain well.
  2. Heat a large skillet over medium heat and add olive oil. Once hot, add the cooked gnocchi and cook for 5-7 minutes until crispy and golden brown, stirring occasionally.
  3. Add fresh spinach to the skillet and continue cooking until it wilts.
  4. Crumble feta cheese over the top and mix everything well. Season with salt and pepper to taste.
  5. Serve hot and enjoy!

Notes

Use fresh gnocchi for the best texture. Avoid overcrowding the pan while frying the gnocchi for optimal crispiness. Fresh spinach provides better flavor than frozen; if using frozen, ensure it's well-drained. Don't skimp on the feta for enhanced flavor!
