Preparation
- Preheat your oven.
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of your springform pan.
- Bake until golden brown and then let it cool.
Making the Filling
- Beat cream cheese and sugar until smooth.
- Add in vanilla and sour cream, mixing until combined.
- Gently fold in chopped peaches.
Baking
- Pour the peach filling over the cooled crust.
- Bake until set but still slightly jiggly in the center.
- Let it cool down before chilling it in the refrigerator for several hours.
Serving
- Once set, slice up your creamy peach cobbler cheesecake and serve it chilled.
Notes
Serve with a dollop of whipped cream or a scoop of vanilla ice cream. You might sprinkle some cinnamon or nutmeg on top for a touch of spice. Fresh mint leaves can also be a lovely garnish.
