Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup sugar
For the filling
  • 16 oz cream cheese, softened Make sure it's at room temperature for a smoother texture.
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups fresh peaches, chopped Use ripe, juicy peaches for the best flavor.

Method
 

Preparation
  1. Preheat your oven.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of your springform pan.
  3. Bake until golden brown and then let it cool.
Making the Filling
  1. Beat cream cheese and sugar until smooth.
  2. Add in vanilla and sour cream, mixing until combined.
  3. Gently fold in chopped peaches.
Baking
  1. Pour the peach filling over the cooled crust.
  2. Bake until set but still slightly jiggly in the center.
  3. Let it cool down before chilling it in the refrigerator for several hours.
Serving
  1. Once set, slice up your creamy peach cobbler cheesecake and serve it chilled.

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. You might sprinkle some cinnamon or nutmeg on top for a touch of spice. Fresh mint leaves can also be a lovely garnish.
