Preparation
  1. In a large pot, brown the Italian sausage over medium heat until fully cooked.
  2. Add the chopped onions and minced garlic to the pot, and sauté for a few minutes until fragrant.
  3. Toss in the chopped carrots and any additional vegetables you prefer, stirring to combine.
  4. Pour in the broth and bring to a simmer. Allow the soup to cook until the vegetables are tender.
  5. Stir in the heavy cream and fresh spinach, cooking until the spinach is wilted.

Notes

Customize your veggies based on availability. For the best flavor, brown the sausage well. For an extra creamy texture, use heavy cream instead of half-and-half or milk.
