For the pasta and chicken
  • 12 oz bowtie pasta Cook until al dente
  • 1 lb chicken breast Cut into bite-sized pieces
  • 2 cups broccoli florets Fresh or frozen
For the cowboy butter sauce
  • 1/2 cup unsalted butter Melt and use as the base for sauce
  • 2 cloves fresh garlic Minced for flavor
  • 1 tbsp fresh herbs Chopped (e.g., parsley, chives)
  • 1 lemon juiced and zested For a burst of citrus flavor

Preparation
  1. Cook the bowtie pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat and add minced garlic. Sauté until fragrant.
  3. Add chicken pieces to the skillet and cook until browned and cooked through.
  4. Once the chicken is cooked, add the broccoli florets and sauté for a few minutes until tender.
Combining
  1. Add the cooked bowtie pasta to the skillet.
  2. Pour in the lemon juice and zest, and sprinkle with fresh herbs. Toss everything together until well combined.
  3. Serve warm, and if desired, add freshly grated parmesan cheese on top.

Notes

Serve with a light salad or fresh bread to soak up the sauce. Cooking the pasta al dente will help it hold its shape. Don't skip the lemon zest for added aroma.
