  • 1 cup cooked quinoa Make sure the quinoa is cooked before using.
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup whole wheat flour Can substitute with almond flour for a denser texture.
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey (optional) Can be omitted for a less sweet flavor.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the cooked quinoa, cottage cheese, and eggs until well combined.
  3. Add the whole wheat flour, baking powder, salt, honey, and olive oil to the mixture, stirring until everything is blended.
  4. Pour the batter into the greased loaf pan and smooth out the top.
  5. Bake for 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Allow it to cool for a few minutes before removing it from the pan.

Notes

For best results, use cooked quinoa and allow the bread to cool completely before slicing.
