Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the cooked quinoa, cottage cheese, and eggs until well combined.
- Add the whole wheat flour, baking powder, salt, honey, and olive oil to the mixture, stirring until everything is blended.
- Pour the batter into the greased loaf pan and smooth out the top.
- Bake for 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow it to cool for a few minutes before removing it from the pan.
Notes
For best results, use cooked quinoa and allow the bread to cool completely before slicing.
