Method
 

Preparation
  1. Place the cottage cheese in a blender and blend on high speed for about 1-2 minutes until very smooth and creamy.
  2. Add the sweetener, peanut butter, and vanilla extract (if using) and blend again on medium speed for another minute until well mixed.
  3. Gently stir in the chocolate chips or blend them into the mixture.
  4. Transfer the mixture into a freezer-safe container, smooth the top, and cover to prevent ice crystals.
  5. Freeze for at least 3-4 hours before serving.
Serving
  1. Remove the ice cream from the freezer and let it sit at room temperature for 15-20 minutes before scooping.
  2. Serve in bowls or cones and add desired toppings like fresh fruits, nuts, or chocolate sauce.
Storage
  1. Store any leftovers in a well-sealed, airtight container. Can last up to a month in the freezer.
  2. Let the ice cream sit at room temperature for 15-20 minutes to soften before serving leftovers.
