  • 3 ripe bananas, mashed Ensure bananas are very ripe for the best flavor and moisture.
  • 1 cup sugar
  • 1/3 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 1 ½ cups all-purpose flour
  • 2 tablespoons espresso powder Can be substituted with instant espresso powder or finely ground espresso beans.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the mashed bananas and sugar. Stir in the melted butter.
  3. Mix in the egg and vanilla extract until well combined.
  4. Add the baking soda and salt to the mixture, then gradually mix in the flour until just combined.
  5. In a small bowl, mix the espresso powder with a tablespoon of water to form a paste.
  6. Pour half of the banana bread batter into the prepared loaf pan.
  7. Drop spoonfuls of the espresso paste onto the batter, then swirl it gently with a knife.
  8. Pour the remaining batter over the espresso layer and swirl again.
  9. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before slicing and serving.

Notes

Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream. Can also be enjoyed plain or with a sprinkle of nuts for added texture. This banana bread is versatile and can be made in a muffin tin; just reduce the baking time.
