Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the mashed bananas and sugar. Stir in the melted butter.
- Mix in the egg and vanilla extract until well combined.
- Add the baking soda and salt to the mixture, then gradually mix in the flour until just combined.
- In a small bowl, mix the espresso powder with a tablespoon of water to form a paste.
- Pour half of the banana bread batter into the prepared loaf pan.
- Drop spoonfuls of the espresso paste onto the batter, then swirl it gently with a knife.
- Pour the remaining batter over the espresso layer and swirl again.
- Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream. Can also be enjoyed plain or with a sprinkle of nuts for added texture. This banana bread is versatile and can be made in a muffin tin; just reduce the baking time.
