- In a pot, heat a little oil over medium heat. Add the sliced onion, minced ginger, and garlic. Sauté until fragrant, about 2-3 minutes.
- Add the chicken breasts to the pot and pour in the chicken broth. Bring it to a boil.
- Once boiling, lower the heat and let it simmer for about 15 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and set it aside.
- In the same pot, add the sliced carrots and cook for about 5 minutes. Then, add the egg noodles and cook according to package directions.
- After the noodles are cooked, return the shredded chicken to the pot along with the bok choy and soy sauce. Mix well and season with salt and pepper.
- Serve hot, garnishing each bowl with chopped green onions.
Notes
Use fresh ingredients for the best flavor. Feel free to customize by adding your favorite vegetables. Store leftovers in separate containers to prevent noodles from getting mushy.
