Ingredients

For the dough
  • 3 cups all-purpose flour Use fresh flour for best results.
  • 1 cup active sourdough starter Ensure starter is active and bubbly.
  • 1 cup warm water Use warm, but not hot water.
  • 1 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 tablespoon cinnamon Adjust based on preference.
  • 1 tablespoon butter, melted For brushing the top.

Method

Preparation
  1. In a large mixing bowl, combine the active sourdough starter and warm water. Stir gently until well mixed.
  2. Gradually add the flour, salt, and sugar. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until it’s smooth and elastic.
  4. Place the dough in a lightly greased bowl and cover it with a kitchen towel. Let it rise in a warm area for about 4 to 6 hours, or until it doubles in size.
  5. Once risen, punch down the dough and roll it out into a rectangle.
  6. Mix together the cinnamon and sugar in a small bowl, then sprinkle it over the rolled-out dough.
  7. Roll the dough tightly, starting from the long side, to form a loaf. Pinch the ends to seal it.
  8. Place the loaf in a greased loaf pan, cover it again, and let it rise for another 1 to 2 hours.
  9. Preheat the oven to 375°F (190°C). Once the dough has risen again, brush the top with melted butter.
  10. Bake for 30 to 35 minutes or until golden brown. Let it cool before slicing.
