Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, mash the bananas until smooth. Stir in the melted butter.
- Mix in the baking soda and salt, then add the sugar, egg, and vanilla extract.
- Gradually stir in the flour until just combined.
- In a small bowl, mix the brown sugar and cinnamon together.
- Pour half of the banana bread batter into the prepared loaf pan, sprinkle half of the cinnamon-sugar mixture on top, then pour the remaining batter and sprinkle the rest of the cinnamon-sugar on top.
- Use a knife to swirl the cinnamon-sugar into the batter.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool completely before slicing.
Notes
Serve warm with a pat of butter or a drizzle of maple syrup. It's also delightful with fresh fruit or a scoop of ice cream for dessert. Can be frozen by wrapping it tightly in plastic wrap or aluminum foil.
