  • 3 ripe bananas Ensure they are very ripe for sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, mash the bananas until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt, then add the sugar, egg, and vanilla extract.
  4. Gradually stir in the flour until just combined.
  5. In a small bowl, mix the brown sugar and cinnamon together.
  6. Pour half of the banana bread batter into the prepared loaf pan, sprinkle half of the cinnamon-sugar mixture on top, then pour the remaining batter and sprinkle the rest of the cinnamon-sugar on top.
  7. Use a knife to swirl the cinnamon-sugar into the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool completely before slicing.

Notes

Serve warm with a pat of butter or a drizzle of maple syrup. It's also delightful with fresh fruit or a scoop of ice cream for dessert. Can be frozen by wrapping it tightly in plastic wrap or aluminum foil.
