Ingredients
  

For the Marinade
  • 1 cup Fresh lime juice Use freshly squeezed for best flavor
  • 1 bunch Fresh cilantro, chopped Use fresh cilantro for maximum flavor
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Steak & Assembly
  • 1 pound Steak (flank or skirt) Marinate and cook to desired doneness
  • 2 cups Rice, cooked Any type of rice works; white or brown recommended
  • 1 cup Bell peppers, sliced
  • 1 medium Red onion, sliced
  • 1 cup Extra cilantro, for garnish Optional
  • 1 lime Lime, for drizzling

Method
 

Marinating the Steak
  1. In a bowl, combine fresh lime juice, chopped cilantro, minced garlic, olive oil, salt, and pepper.
  2. Mix well, then coat the steak evenly in the marinade.
  3. Let the steak sit for at least 30 minutes to absorb the flavors.
Cooking the Components
  1. While the steak marinates, cook rice according to package instructions.
  2. Prepare your veggies by chopping bell peppers and red onions.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Cook the marinated steak for about 4-5 minutes per side, or until it reaches desired doneness.
  5. Let the steak rest for a few minutes, then slice it thinly against the grain.
Assembling the Bowls
  1. In a bowl, place a serving of rice.
  2. Top it with sliced steak, veggies, and extra cilantro if desired.
  3. Drizzle with lime juice for added flavor and enjoy!
