Dressing Ingredients

  • pepper To taste.

Preparation
  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta cheese, diced cherry tomatoes, and diced cucumber.
  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine without mashing the avocado.
  4. Sprinkle with fresh herbs if desired.
