Preparation
- Heat a large skillet over medium heat and add olive oil.
- Slice the chicken sausage into bite-sized pieces and add them to the skillet, cooking until browned and heated through.
- Remove the sausage from the skillet and set aside.
- In the same skillet, add chopped onions and minced garlic, and sauté until fragrant.
Cooking
- Sprinkle in the orzo pasta and mix it well with the onions and garlic.
- Pour in the chicken broth and bring to a boil.
- Lower the heat and let it simmer, cooking the orzo until tender.
- As the orzo cooks, add in the broccoli florets and allow them to steam until bright green and tender.
- Stir back in the chicken sausage, mix everything well, and season with salt and pepper to taste.
- Serve warm, garnished with a sprinkle of parsley.
Notes
Use fresh broccoli for better flavor. Frozen broccoli can be used but add it earlier in the cooking process. Taste as you go to adjust seasoning and feel free to mix in other vegetables or spices for variation.
