Ingredients
  

For the cookie dough
  • 1 cup butter, softened Ensure butter is at room temperature.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 cups all-purpose flour Sifted
  • 1 tsp vanilla extract
  • 2 large eggs At room temperature
  • 1 cup chocolate chips Semi-sweet or dark chocolate
For the caramel layer
  • 1 cup caramel sauce Store-bought or homemade, cooled slightly before pouring

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line a baking pan.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually mix in the flour until just combined, then fold in the chocolate chips.
  5. Spread half of the cookie dough mixture into the prepared baking pan.
Adding caramel
  1. Pour the caramel sauce over the cookie dough layer, spreading evenly.
  2. Drop spoonfuls of the remaining cookie dough over the caramel and spread gently.
Baking
  1. Bake in the preheated oven for about 20-25 minutes or until golden brown.
  2. Remove from the oven and allow to cool completely in the pan before slicing.

Notes

Serve with vanilla ice cream or drizzle warm chocolate sauce on top. Bars can be made a day in advance and stored in an airtight container. They can also be frozen for later enjoyment.
