For the Chicken
  • 1 lb chicken breasts, diced Use leftover or rotisserie chicken for convenience.
  • 2 tbsp olive oil For cooking the chicken.
  • 1/2 cup buffalo sauce Adjust according to spice preference.
For the Salad
  • 4 cups romaine lettuce, chopped Serves as the base of the salad.
  • 1 cup celery, sliced Adds crunch to the salad.
  • 1 cup carrots, shredded For added color and sweetness.
  • 1/2 cup red onion, sliced Provides a nice bite.
  • 1 cup cherry tomatoes, halved Adds juiciness.
For Garnishing
  • 1/2 cup blue cheese or ranch dressing Use as a dressing on top.

Method
 

Cooking the Chicken
  1. Heat olive oil in a skillet over medium heat.
  2. Add the chicken pieces and cook for 6 to 8 minutes, until golden and fully cooked.
  3. Pour buffalo sauce over the chicken and toss to coat evenly, simmering for 1-2 minutes before removing from heat.
Preparing the Salad
  1. In a large bowl, mix together chopped romaine, sliced celery, shredded carrots, sliced red onion, and halved cherry tomatoes.
  2. Toss gently to combine the flavors.
  3. Top the salad with warm buffalo chicken and drizzle dressing on top.
Serving the Salad
  1. Serve immediately for the best flavor and texture.
  2. Optionally serve extra dressing on the side.
  3. Pair with crusty bread or tortilla chips for added crunch.

Notes

For best results, allow the chicken to cool slightly before combining with the salad. You can also marinate the chicken in buffalo sauce ahead of time.
