  • 3 medium ripe bananas Use overripe bananas for maximum sweetness.
  • 1/2 cup brown butter Melt butter until it turns golden brown and aromatic.
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour Spoon flour into measuring cup and level with a knife.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Melt butter in a saucepan over medium heat until it turns golden brown and has a nutty aroma.
  3. In a bowl, mash the ripe bananas until smooth.
  4. Mix in the brown butter, sugar, eggs, and vanilla until combined.
Mixing
  1. In another bowl, whisk together the flour, baking powder, and salt.
  2. Gradually combine the wet and dry ingredients, stirring until just mixed.
Baking
  1. Pour the batter into the prepared muffin tin.
  2. Bake for about 18 to 20 minutes, or until a toothpick inserted comes out clean.

Notes

These muffins are great served warm with butter or honey. They also pair well with coffee or tea. Store in an airtight container for a few days.
