Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash ripe bananas until smooth.
- Add eggs and mix well.
- Stir in your choice of protein powder, baking soda, cinnamon, and any nuts or chocolate chips if you’d like. Combine until you have a smooth batter.
Baking
- Line a muffin tin with muffin liners and pour the batter into each cup, filling them about 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
Notes
Use overripe bananas for better flavor. Don’t overmix to keep the muffins light and fluffy. Store in an airtight container to maintain freshness.
