  • 3 medium ripe bananas The riper, the sweeter!
  • 2 large eggs
  • 1 cup protein powder Your choice of flavor
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup nuts or chocolate chips (optional) Enhances flavor and texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash ripe bananas until smooth.
  3. Add eggs and mix well.
  4. Stir in your choice of protein powder, baking soda, cinnamon, and any nuts or chocolate chips if you’d like. Combine until you have a smooth batter.
Baking
  1. Line a muffin tin with muffin liners and pour the batter into each cup, filling them about 3/4 full.
  2. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

Use overripe bananas for better flavor. Don’t overmix to keep the muffins light and fluffy. Store in an airtight container to maintain freshness.
