  • 2 large ripe avocados Should have a slight give when pressed for creaminess.
  • 2 cloves minced garlic Add more if you prefer a stronger garlic flavor.
  • 2 tablespoons freshly squeezed lemon juice Helps to prevent browning and adds freshness.
  • 2 tablespoons olive oil Can be adjusted to make a lighter sauce.
  • 1/4 cup fresh basil leaves Can be substituted with parsley or cilantro.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
Optional Toppings
  • 1/4 cup grated Parmesan cheese For a non-vegan option.
  • 2 tablespoons nutritional yeast For a vegan option.
  • a few fresh basil leaves For garnish.

Method
 

Preparation
  1. Cook your chosen pasta according to the package directions.
  2. Once cooked, drain the pasta and set aside.
Making the Sauce
  1. In a blender or food processor, combine ripe avocados, minced garlic, lemon juice, olive oil, fresh basil, salt, and black pepper.
  2. Blend these ingredients together until the mixture is smooth and creamy.
  3. Taste the sauce and adjust the seasoning to your preference.
Serving
  1. Toss the warm pasta with the avocado sauce until evenly coated.
  2. Serve immediately in warm bowls, topped with grated Parmesan or nutritional yeast and fresh basil leaves.

Notes

To store leftover sauce, place it in an airtight container with a squeeze of lemon juice on top to prevent browning. Use within 1-2 days for best flavor.
