Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond butter and sugar.
- Crack in the egg and mix until well combined.
- Sprinkle in the baking soda and stir until smooth.
Baking
- Scoop out small amounts of dough and roll them into balls.
- Place them on a baking sheet lined with parchment paper.
- Gently flatten each ball with the back of a fork.
- Bake for about 10-12 minutes or until the edges are golden brown.
- Let them cool slightly before transferring to a wire rack.
Notes
Serve warm with tea or coffee, or package as a gift. Store in an airtight container for up to a week, or freeze for longer storage.
