Ingredients

Main Ingredients
  • 1 head head of cauliflower, riced or 4 cups pre-riced cauliflower
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup mixed vegetables (like peas and carrots)
  • 2 scrambled eggs
  • 3 tablespoons soy sauce or tamari for gluten-free
  • to taste Salt and pepper
  • 3 tablespoons green onions, chopped

Method

Preparation
  1. If using a whole head of cauliflower, cut it into florets and pulse in a food processor until it resembles rice. Skip this step if using pre-riced cauliflower.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped onion; sauté until fragrant and translucent.
  3. Add mixed vegetables to the skillet and cook for about 3-4 minutes until they are tender.
  4. Push the veggies to the side and crack the eggs into the pan. Scramble the eggs until fully cooked, then mix them in with the veggies.
  5. Stir in the riced cauliflower and soy sauce. Cook together, stirring frequently, for about 5-7 minutes or until the cauliflower is tender.
  6. Season with salt and pepper as desired and mix in the chopped green onions.

Notes

Use fresh cauliflower for the best results and don’t overcook it. Customize your veggies based on what you have available. This dish stores well in the fridge for up to 4 days in an airtight container.
