Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch springform pan with cooking spray.
- Open the cinnamon roll dough and set aside the icing packet for later use. Cut the rolls into smaller pieces.
- Press half of the cinnamon roll pieces into the bottom of the springform pan to create a crust.
- In a large mixing bowl, combine the softened cream cheese and granulated sugar until well blended.
- Add the sour cream, eggs, vanilla extract, and cinnamon; mix until smooth.
- Pour the cream cheese mixture over the cinnamon roll base in the pan.
- Take the remaining cinnamon roll pieces and place them on top of the cream cheese filling, pressing them slightly into the mixture.
Baking
- Bake for 45-50 minutes, or until the edges are set and the center has a slight jiggle.
- Once baked, remove the cheesecake from the oven and let it cool at room temperature.
- After cooling, refrigerate for at least 4 hours or overnight.
Serving
- Before serving, mix the reserved icing with powdered sugar and milk to create a drizzling glaze.
- Drizzle the icing over the cheesecake, and it’s ready to be served!
Notes
Ensure room temperature ingredients for best blending. Do not overmix to avoid air bubbles. Chill the cheesecake properly for optimal flavor melding. Consider garnishing with crushed nuts or whipped cream.
