Preparation
- Preheat your oven to 375°F (190°C).
- Chop the broccoli into small pieces and steam or blanch for a few minutes until tender but still crisp.
- In a bowl, combine the steamed broccoli, cheese, and minced garlic. Stir until well mixed, then add salt and pepper to taste.
- Slice each chicken breast to create a pocket, being careful not to cut all the way through.
- Fill each chicken pocket generously with the broccoli and cheese mixture. Secure openings with toothpicks if needed.
- Rub the outside of the chicken breasts with olive oil, and season with more salt, pepper, or your favorite spices.
Cooking
- Place the stuffed chicken breasts in a baking dish and cover with foil.
- Bake for about 25 to 30 minutes, then remove the foil and bake for an additional 10 to 15 minutes until cooked through and cheese is bubbly.
Serving
- Allow the chicken to rest for a few minutes before slicing to reveal the cheesy filling.
Notes
You can prepare chicken breasts ahead of time and store them in the refrigerator until ready to bake. Pairs well with green salad or garlic mashed potatoes.
